
Orange eats table food (no baby food)...traditional Ethiopian food (mostly vegetarian), bananas, eggs, and some Italian food. But mostly traditional ET food. So we have frozen 20 sheets of Injera, ET Lentils, and an ET Cabbage dish so far. Doro Wat (with faux chicken) will be the next (and last) dish that we will have time to make before travel (this Friday!). We LOVE Ethiopian food so we are really looking forward to having this as a more regular part of our menu at home. When Orange comes home we will give her at least 1 Ethiopian meal per day, then introduce new foods and reduce it to a few times per week, then will go to more of a 1 ET dish per week. Since we also love Japanese, Mexican, Italian, Indian, Vietnamese, Chinese, and French food as well. It will be fun to see what she likes over time. Jon is the main cook of our house, but that will change because I will not be working (tomorrow is my last day at work!) so I am really looking forward to cooking at home (if the girls let me, haha). But I think I will still very much so look forward to a good order in of some local faves. If anyone has a recommendation for cook books that you couldn't live without then please let me know. I'm going domestic! :)
And guess what?! In one week, she will be with us! In our arms! I will know her voice, her face, and begin to learn about her personality. We are so excited and ready to go get her.

That is awesome that you will be able to be at home now!!! I love our work because I am always at home with the kids...and do work from home. It is a challenge, but much much much more reward!!!!! SOOOOO EXCITED for your trip-soon !!!!! She will be in your arms....well, she may have to get used to you first, but it won't be long!!!! :)
I am so so impressed with the Ethiopian cuisine you are preparing. I wish we knew more about cooking ET food. When you get her home you'll report on how she likes your cooking and which dishes are her favorite etc. I hope! Amanda
I can't believe how quickly the day is coming! So excited for you! And care to share you recipes? Do you buy your injera or make it? I have been promising Ash that I will attempt to make ET food again. I have not had much success. How long can you freeze injera?

Wow...you are traveling so very soon...how exciting!!! I love that you have all these food prepared. We havne't gone to an ET restaurant yet, but we're excited to go to celebrate our referral (whenever we get one)...I hope we all love it like you do. Great that you'll be home too - are you taking maternity leave? I plan to...how long are you planning to take off? I was thinking between 2-4 months...not sure yet.

We are blessed to have a couple of great Ethiopian restaraunts nearby and their prices are so reasonable, take out is probably cheaper than making it from scratch. I'm thinking of asking the owner of one of the restaurants if she'd let me spend a day with her in the kitchen sometime--I think that would just be so much fun!
